Potatoes and Eggplant
Ingredients #
Pinch asofoetida ½ T cumin ½ red onion Potatoes Tomatoes Eggplant (can also use greenbeans, green peppers, spinach, fenugreek 1 tsp kashmiri mirch (red chili for flavor) 1 teaspoon deggi mirch (red chili for color) ½ Teaspoon amchur powder (dried mango powder) 1 teaspoon salt
Directions #
- Fry cumin and chili in oil with hing
- Add chopped onion
- Add chopped potato and cook to halfway
- Add chopped tomato
- Add chopped eggplant
- Add turmeric and salt
- Once veggies are half cooked, add mirch and amchur powder
- Let cook on very low heat until all veggies are cooked
