Aloo Paratha
Ingredients
Dough:
- whole wheat flour
- salt
- ajwain
- water
Filling:
- 5 peeled potatoes
- 1.5 tsp salt
- 2 tsp hot pepper
- 1 bunch chopped mint
- 1 inch grated ginger
- 1 bunch chopped coriander leaves
- 2 tsp coriander powder
- 2 tsp ajwain
- 1 hot pepper chopped
- 1 tsp amchur powder
Directions
- Add whole wheat flour salt ajwain water mix and knead to make dough, leave to rest while you make the filling. It should be glossy and wet
- Mash 5 peeled potatoes, 1.5 tsp salt, 2 tsp hot pepper, 1 bunch chopped mint, 1 inch grated ginger, 1 bunch chopped coriander leaves, 2 tsp coriander powder, 2 tsp ajwain, 1 hot pepper chopped, 1 tsp amchur powder
- Let it rest 5 minutes
- Knead the dough 5 minutes
- Roll one out to 8" round 1/8" thick
- Add 3T filling
- Pinch it closed
- Cut off bunched up dough on top
- Roll it flat again
- Cook it on a hot pan with ghee, press with a spoon, flip to cook both sides until evenly browned
- Serve with plain yogurt and pickle
