Directions #

  1. Add whole wheat flour salt ajwain water mix and knead to make dough, leave to rest while you make the filling. It should be glossy and wet
  2. Mash 5 peeled potatoes, 1.5 tsp salt, 2 tsp hot pepper, 1 bunch chopped mint, 1 inch grated ginger, 1 bunch chopped coriander leaves, 2 tsp coriander powder, 2 tsp ajwain, 1 hot pepper chopped, 1 tsp amchur powder
  3. Let it rest 5 minutes
  4. Knead the dough 5 minutes
  5. Roll one out to 8" round 1/8" thick
  6. Add 3T filling
  7. Pinch it closed
  8. Cut off bunched up dough on top
  9. Roll it flat again
  10. Cook it on a hot pan with ghee, press with a spoon, flip to cook both sides until evenly browned
  11. Serve with plain yogurt and pickle
